Sweet and cheesy bread is something of a weakness of mine. So I thought what if I placed that in a brioche? What would a sweet cheesy brioche be like? Delicious.
My Sweet Cheesy Brioche
- 1 pack shredded cheese
- 130 ml milk
- 11 g dry yeast
- 3 egg yolks
- 2 1/3 cup plain flour
- 1/3 cup sugar
- 40 g soft butter
- Rice malt syrup (honey or sugar)
This is a variation of the Yummy Chocolate Brioche recipe I shared last month.
In a container, feed the yeast by mixing the lukewarm milk and yeast together and letting it foam. In another bowl, add the flour, 2 egg yolks, salt, sugar and butter. Pour the foamy yeast and knead for 5 minutes.
Roll the dough using a rolling pin and form a rectangle. Sprinkle the dough with shredded cheese and sugar (or honey). You gauge how much cheese and sugar you want to put in there but not too much that you can’t roll them up.
Grease the tin.
Cut into strips, enough to fill your baking tin. Roll the strips and place them in a tin. Leave to rest for 1 hour and 30 minutes, making sure it is away from draughts. Preheat the oven to 165°C.
Brush the dough with the remaining egg yolk. Sprinkle more cheese and sugar on top. Bake for 25 mins.
