Three Raspberry recipes: jello, jam and sangria

Its almost the season for raspberries, but frozen raspberry is easy to get any time of the year so you can make these yummy raspberry recipes anytime of the year: one for the kids – raspberry jelly; one for you – raspberry vodka sangria; and one for the family – raspberry jam.

Sugar-free raspberry jelly

Ingredients:

  • 3 cups raspberries
  • Rice malt syrup
  • I Quit Sugar (IQS) Gelatine

Mix 3 cups of frozen raspberries, two cups of water and rice malt syrup (you can substitute this for honey) on a stove top. Mix until raspberries are cooked.

Meanwhile, mix 3 ½ tablespoons of the IQS Gelatine with 1/3 cup cold water and let it set until it’s a woobly goop (an actual scientific name).

Taste the raspberry juice and adjust according to your taste. Use only half of this mixture for the jelly, the rest for the sangria. Add the gelatine mix and let it cool, or put in shape moulds.

Raspberry vodka sangria

Pour the rest of the mixture into a pitcher. Add more water if it’s too strong. Squeeze two oranges into the mix.

Add half a bottle of vodka – or a whole bottle depending on how bad your week was.

If you have other fruits in the house, like kiwi or watermelon, slice them up and mix it with the drink.

Let it cool in the fridge.

 

Raspberry vodka sangria

Make your own raspberry jam

Ingredients:

  • 600g raspberries
  • Rice malt syrup
  • Lemon juice
  • Gelatine

Cook the raspberries and rice malt syrup slowly. You decide how sweet you want it. Add the lemon juice if you want it a bit sour but skip if you don’t. Add the gelatine if you want the mixture thicker. Start with one teaspoon and see how thick that is. Usually a bit of gelatine is enough. Place in a sealed jar and put in the fridge. My batch lasted months in the fridge.
