I’ve always wanted to try making panna cotta, and found this super easy mango panna cotta recipe online. Combining mango and panna cotta is a great idea!

Easy mango panna cotta recipe
- For mango layer:
- Frozen diced mango (3 cups)
- 3 tsp I Quit Sugar Gelatine (you can use regular gelatine)
- ½ cup hot water
For vanilla layer:
- 3 tsp I Quit Sugar Gelatine
- ¼ cup hot water
- 500ml Thickened cream
- 1 tbsp vanilla extract
- 2-6 tsp sugar (depends how sweet you want it)
Follow the method in the video and start by blitzing the mango pieces into a puree. The problem with doing this to frozen mango is that it gets stuck cause it’s frozen. I poured ¼ cup hot water in with the mangoes then blitzed it.
Dissolve the gelatine in hot water then mix it with the mango. Pour the mango mix in the four cups like in the video. It’s hard to find a container to place the glasses. I used a plastic rectangular container and a rolled up tea towel.
Refrigerate for two hours (mine only needed an hour).
Prepare the vanilla layer by dissolving the gelatine in the hot water. Add the cream, vanilla extract and sugar. Mix them well then pour into the glasses with the mango puree. Refrigerate again for a couple of hours (2-4 hours is good).
Top with diced mangoes, or chocolate. Enjoy!
