This super creamy capsicum and chorizo soup is so very delicious. It is easy to finish a batch in one sitting. The chorizo adds a very nice zing to it.
5-6 red capsicums
2 garlic cloves
1 tsp smoked paprika
100 ml pouring cream
Peel the onion and garlic, dice the chorizo and cut the capsicum in quarters, making sure you remove the seeds.
In a food processor, slice up the capsicum, onion, garlic and chorizo. Take a sauce pan and place on stove top with 500ml of water. Add the chopped up ingredients from the food processor plus the smoked paprika and salt.
Cook for 15-20 minutes then add the cream. Keep mixing while cooking for 30 seconds.
I chopped up some chorizos and grilled it a bit before adding it to the soup for some chewy bits. Definitely very yummy.
Add more paprika if you want more spice. Or salt, depending on your preference.
The soups can be made in big batches. I freeze half to save for another day. You can serve it hot or cold.
