Muffins are great as a treat, snack or for kids’ lunchboxes. Easy to make too!
You can give your normal muffins a very yummy twist with this wholemeal cinnamon banana muffins recipe with cream cheese filling.
This recipe for banana muffins is a variation of one that caught my eye in Weight Watchers magazine.
90g cream cheese (light or not)
1 cup brown sugar (rice malt syrup for sugar free option)
1 ¼ cup wholemeal self raising flour
1 tsp ground cinnamon
2 medium bananas
White chocolate chips (optional but yummy)
Preheat the oven to 180°C. Grease the muffin tin with butter.
In a bowl, mix cream cheese and white chocolate.
In another bowl, mix eggs, rice malt syrup (sugar) and butter. Mash bananas in the mixture. Mix flour and cinnamon with the batter.
Spoon half the batter into the muffin tin. Drop 1 teaspoon of the cream cheese mixture in the centre. Top with more batter.
Make sure not to fill up the tin too much to leave room for rising.
Bake for 15-20 minutes.
